Blue Crab and Vidalia Onion Soup
Ingredients:
1 lb. Bacon, small dice
4 ea Vidalia onions, julienne (Cut in Strips)
¼ C Thyme, fresh picked
2Tbs. Garlic, chopped fine
2 C White wine
2 C Roma tomatoes, diced small
8 C Chicken Stock
1 qt Heavy cream
1qt Milk
1lb. Crab claw meat
1 lb. Lump crab meat
12 Leaves Fresh basil, chiffonnade (Cut in Thin Strips)
Directions:
1. Cook bacon until crisp.
2. Add onions and sauté until soft.
3. Add garlic and thyme.
4. Sweat for two minutes then add white wine and reduce by half.
5. Add chicken stock, heavy cream, and milk.
6. Bring to a boil.
7. Cook for about fifteen to twenty minutes on simmer
8. Add crab.
9. Cook for about fifteen to twenty minutes on simmer.
10. Skim Oil off top of soup and discard.
11. Finish with basil.
12. Season to taste with salt and pepper as necessary.
